Sterlet caviar was once refered to as "golden caviar", comparable to Beluga, thanks to it's taste and pearl color. Sterlet was once considered superior to all others. The the times of the Russian Czars, it was believed to be the best of the sturgeons. Small golden Sterlet, once reserved for the Czars, Iranian shahs, Austrian Emporers and other Royalty of the day, is now rare and coveted.

Ranging in size from 1.5mm to 2mm the rich flavor and grey color harken to the old Russian tradition.
